Coconut “Greek Yogurt”

IMG_3486 Ever miss thick, creamy yogurt either because it’s not filling long enough or because your intolerant to dairy? Well then this is for you.
Before I  show you the recipe let me just tell you something about this yogurt…
It’s vegan (and therefore dairy free). It’s LCHF. It’s delicious!

Ingredients:
♥ 1 can of full-fat coconut milk (you will only need to firm part) ♥ 150-200g soy yogurt

Start by putting the can of coconut milk in the fridge overnight.
The next day open the can in the bottom and pour the liquid into a container – safe for making smoothie or drinking. Scoop out the firm part (about 200g) into a bowl.
Mix with soy yogurt. Start with 150 grams then refrigerate for at least 5 hours.
If you want it thinner you can add more soy yogurt. The longer it sits in the fridge the firmer it will get.IMG_3485
