Rice-less Vegetarian Sushi

IMG_3341There’s just no beating this recipe! I mean who wouldn’t want sushi without all the carbs that comes with the (white!) rice. So here’s an idea how to use the loved cauliflower rice.

The rice: (makes enough for two rolls)
♥ 300g cauliflower, grated or “riced” in a foodprocesser (pulse until the consistency of rice) ♥ 2 tbsp rice vinegar (or white wine vinegar if you don’t care about being fancy and sushi-y, is that even a word??)
Place the “riced” cauliflower in a microwave-safe dish and cook covered for 2-4 minutes or until tender. Mix in a bit of rice vinegar and spread out on a plate or parchment paper. Let cool completely

The sushi:
♥ 2 nori sheets ♥ 2 servings of cauliflower rice (one of the above), cooled ♥ filling of your choice. I don’t really like raw fish so I use 1/2 avocado and 1/3 cucumber ♥ wasabi paste ♥ soy sauce
Make the sushi as you normally would, stuffing with cauliflower “rice” instead of the regular sushi rice.
Serve with soya sauce and wasabi.
